Milk Pie
This is a traditional South African pie. Many variations exists, and each cook will swear his/hers to be the best.
They are all wrong. Here is the best Milk Pie recipe:
Crust
- 1/4 pound butter (butter, not margarine)
- 2 tablespoons sugar
- 2 tablespoons cooking oil (use olive oil, it is healthier)
- 1 teaspoon vanilla
- 1 egg (beaten)
- 2 cups cake flour
- 2 teaspoons baking powder
- 1 pinch salt
- Mix the butter, oil and sugar.
- Add and mix in the egg and vanilla.
- Sieve the cake flour and baking powder together.
- Mix the wet and dry ingredients.
- Roll out and line a pan with the dough. Depending on the size, you can use more than one pan.
- Bake at 175° C / 350° F until brown.
Filling
- 3 cups milk
- 1 cup sugar
- 3 tablespoons Maizina (cornstarch/cornflour)
- 1 tablespoon cake flour
- 1 pinch of salt
- 3 eggs (separated)
- 1 tablespoon butter (not margarine)
- 2 tablespoons shredded coconut
- 1 teaspoon vanilla
- Boil the milk and sugar.
- Mix Maizina, cake flour, salt and water.
- Add the egg yellow to the Maizina-flour mixture and mix until smooth.
- Add the just boiled milk to the Maizina mix.
- Place back on heat and cook until thick. Stir continuously to prevent burning.
- When thick, mix in the butter.
- Remove from the stove and stir in the coconut and vanilla.
- Whip the egg whites until stiff and fold into rest of mixture.
- Fill crusts.
Use butter. Margarine is not healthy. Depending on the type, it either contains too many saturated fats, or the wrong proportions of omega-3 to omega-6.
